Parma Number 5: The Kenmore Tavern … when three cheeses still aren’t enough!

The Verdict: I had high hopes for this Parma given the revamp of the venue of late and the fact that the menu is overt with letting one know: a. this is a classy venue and b. there are a mix of three cheeses on the Parma.  Alas a dry chicken breast, more folded ham and side dishes I wouldn’t serve my enemy left me feeling let down by this offering.

Obligatory Parma Photo

As posted on Instagram (@brisbanesbestparma), this is last night’s Parma as placed in front of me:

Kenmore Tavern Parma

Chicken Breast: From just the look of it I got the sense that this chicken breast a little bit dry and thank goodness I had ordered a pint of Coke to wash down my meal because I certainly needed it here.  Maybe that is why it took 45 minutes for our meals to come out in a virtually empty restaurant?  The chicken breast was just overcooked.

Tomato Sauce: I really enjoyed the tomato sauce on this Parma.  It was rich and flavoursome.  You will note from the photo that there was a good covering albeit it did not cover the whole of the upward facing portion of the chicken as I would have liked.

Ham: What is it with Chicken Parmigiana purveyors and folding up ham at the moment? At least there was a fair bit of ham to try on this Parma despite it being folded into an origami puzzle and it did taste nice.

Cheese: I have already mentioned in the verdict that the menu spruiked three types of cheese on this Parma and the cheese certainly didn’t disappoint.  It was spot on flavour wise however, again, there was not an even covering of it which is another bane of my chicken parmigiana experience.

Side dishes: I probably could have forgiven the dry chicken breast and the ham origami if not for the side dishes that accompanied my dish.  The chips were akin to those chips that you get some times at the fish and chip shop that have been sitting in the hot bay for just a tad too long: some were ultra crispy, some were soft and mushy and some just tasted wrong.  The salad was just not good: I can not come up with an analogy … not good is enough for me!

Presentation: Again either the plate was too small or the chef enjoys placing food on top of other food.  Enough said.

The Final Word: If I lived in the Kenmore, Chapel Hill, Indooroopilly corridor the Kenmore would by my local. It has had a new fit out and has a TAB and that is enough for me.  It is telling that when we walked out of the venue that I commented that the next time we came back I would like to try something else that caught my eye on the menu.  This Parma had it good points (did I mention 3 cheeses?) however the bad points are enough for me to not be rushing back!

Parma #4: Grand Central Hotel … We have a new clubhouse leader!

The Verdict: As the title to this post would suggest the chicken parmigiana at the Grand Central Hotel is the best that I have had so far. It was not a parma though that was not without disappointments though; indeed, yet again I received a parma that was “ham challenged”.

How it looked:

GCH Parma

The Review:

Chicken Breast: The chicken breast in this parma was excellent.  Well crumbed with more than enough meat, it was also cooked to perfection.

Tomato Sauce: I love tomato sauce (yet bizarrely abhor tomatoes), so much so that often on pizza I will order double tomato sauce.  The tomato sauce on this parma was right out of the top drawer and was generously applied to the chicken breast.  With both the quantum and quality aspects ticked I can not fault this sauce.

Ham: Why is it that cooks in pubs seem to be so keen to muck around with the ham on a chicken parma? This parma would have ended up much higher on the ladder IF the ham had not been what could be most positively described as “shredded”.  Fair dinkum: how hard can it be to place a slice of ham on top of the chicken breast without slicing it? This was the main negative to this week’s parma.

Cheese: The cheese on the GCH parma complimented the other parts of the parma well save that the covering of the parma was, again, patchy at best.  I am tired of seeing a coverage of cheese more akin to the coverage of the hair on my head than that of Tom Selleck’s fulsome hairline.  One day soon I hope I find a parma with cheese covering a large swathe of the parma.

Side Dishes: After 3 weeks of what can best be described as a flip of the coin when it came to which of the two side dishes would be good and which would be bad, finally this week’s parma was delivered with both excellent chips and salad.  The chips were crispy, well battered and hot and the salad was fresh, tasty and well seasoned.

The non-reviewables: Price wise the GCH parma was very well priced at $16.  I have to confess that when I was a drinker the Grand Central Hotel Beer Hall was almost a local for me given the amount of time I spent in it however I have only just of late discovered its other bar and the eating area.  No matter whether you are looking for a traditional pub vibe or prefer more of a wine bar vibe the Grand Central Hotel has you covered.

The Final Word: You are in the Brisbane CBD and you feel like a chicken parmigiana then you should definitely work up to Ann Street and try out the Chicken Parmigiana at the Grand Central Hotel.  It is a solid meal, despite the shredding of the ham, that will not break your bank.

Ain’t no party like a Parma Party … and you’re invited!

The end of the first month of Parmas is fast approaching and I can not believe how fast time has flown.

I want to keep the search for Brisbane’s Best Parma as social and interactive as possible. That being the case I would like to celebrate the last Parma of the month by inviting you, members of the Parma Army, to join me.

Each month the invitation will go out to you to come along and enjoy the Parma to be reviewed and to get a bit a chat going.

The final Parma for January will be imbibed on Wednesday 28 January at 6:30pm at the Grand Central Hotel in the Brisbane CBD.

I would be delighted for as many of the Parma Army as possible to attend. Please let me know if you are coming along by lunchtime Tuesday and I will arrange for a table to be booked.

One key rule of the Parma Party to remember: an invitation to join with me in eating Parma does not mean I am buying for everyone. I just want to be clear on that at the outset.

As always: if you have any questions please use the comments section below, shoot me an email or reply on Facebook.

I look forward to seeing you at the Grand Central Hotel next week.

Parma #3: The Pineapple Hotel … “Oh Ham, where art thou?”

The Verdict: My verdict on the chicken parmigiana at the Pineapple Hotel can really be visually captured in just one image.

2015/01/img_1483.jpg

Yes that’s right for those of you wondering: the totality of the ham included as part of my chicken parmigiana was a rectangle of ham that had been folded over a couple of times like a small used hanky. No matter how good the rest of the dish could have been the lack of ham means that there is no way this is Brisbane’s Best Parma.

That said, it would not be a Parma review without examining the rest of the parts of the meal so if you would like to know more please read on. Otherwise we, you the reader and me the writer, already know how this review is going to end so I give you a free to stop reading!

Chicken Breast: The menu spruiks this chicken breast as being from a free range chicken. I have no means of verifying that but I will say that this chicken breast was quite nice albeit in places it was significantly over cooked.

Tomato Sauce: The sauce was the best part of this Parma. There was a great distribution of it and it tasted very nice.

Ham: refer to the picture above. Need I say more? I probably do but given just how little ham there was all I will say is that this aspect of the meal could only have been worsened if it was spam that came out or none at all.

Cheese: given the lack of ham one might have expected this to be a really cheesy Parma but frankly, as the photo above also illustrates, this Parma could have done with more cheese. There was just not enough of it!

Side dishes: the other very strong aspect of this Parma was the chips. They were crispy and hot which is how any chip eater likes them. The salad could have been out of a packet from Coles: not for the first time in this review … Enough said.

The price: I am specifically not reviewing the chicken parmigiana that I am testing based on price but it is worth mentioning that the Pineapple Hotel Parma sits on its bar snacks menu and is priced at $12. That is ridiculously cheap for a meal that, all whinging aside, did fill me.

The venue: We chose to sit in the 5th quarter bar section of the Pineapple Hotel. If you like eating pub food in a pub environment, including TAB and bar close by coupled with the haunting aroma of old beer, man and vomit mixed together, as I do then you can not go wrong sitting here. If you were wondering: a. That is not sarcasm; and b. I genuinely loved sitting in this bar (just to be clear).

The final word: it is sad to say, because I love this venue and the pricing is ridiculously good, that the rationing of the ham and cheese on this Parma made it just not very good. Obviously if you are look for a cheap meal mid week on your way home from the city this Parma is an option but only if you don’t like ham. Simples.

The Parma Poll: Part 1

One of the things that I have found already on my quest to find Brisbane’s Best Parma is that the chicken parmigiana is a meal that promotes much debate.  So, each month, I will be posting a poll for you, the readers, to help come up with the definitive parma.  Each poll will ask questions about parts of the meal that is the chicken parma.  I know what I think but would love to know what you think.

I look forward to seeing the results.

As always, please comment below or on the facebook page should you so wish.

Parma #2: Albion Hotel

The Verdict: The Chicken Parmigiana at the Albion Hotel is another middle range parma that is good for a sneaky mid week feed but hardly one you would be demanding your friends come out with you to share. The high quality of the chicken breast and the chips was militated against by the misshapen way the parmigiana had been put together, the small and wafer thin ham and the insipid salad.

 The Summary:

Chicken Sauce Ham Cheese Sides
Pretty good OK but not evenly spread Jockey sized (small & thin) The ham’s best mate ½ is not good

The Review:

This week’s chicken parmigiana was imbibed at the Albion Hotel in the inner Brisbane suburb of Albion (funnily enough). I had originally intended to try this parma out on Wednesday night but a cursory examination of our fridge at home revealed that we would be eating air for dinner if we did not go out and that is a good enough reason as any to go for a pub meal (as if a reason was needed).

Here is how this week’s parma presented when it came out:

Albion Hotel Parma

Chicken: This chicken breast was really well done. It was largish but thin and had been well cooked. My only criticism of it was that it was a bit too well crumbed for my liking. Just about every bite I felt like I was biting through gravel to get the chicken breast. Once one got the chicken though it was cracking.

Tomato Sauce: The menu described this sauce as a Napoli sauce and it certainly was a tasty one. The problem I had with sauce was that it was fairly haphazardly put onto the chicken breast. In some places there was not enough of it for my liking and in other places the distribution was perfection.

Ham: Have you ever purchased one of the 70 cent loafs of bread from Coles? You know the bread that you could hold up to your TV and still watch the cricket clearly through it is so thin? The ham on this chicken parma was of similar thinness. That disappointment was compounded by the lack of it as the photo above clearly shows. When there is almost an inch of chicken breast uncovered around its circumference because of the size of the ham used there is, in my view, simple not enough ham!

Cheese: Bobo’s pizzas in the TV series Fat Pizza were supposed to be “big and cheesy” but rarely were as described and this chicken parmigiana whilst big certainly wasn’t not cheesy enough for my liking. Again, hark back to the photo above: I have more hair on the top my fast balding head than this chicken parmigiana had cheese in places.

Side Dishes: The chips that came with the Albion Hotel parma were really very good. Crisp and hot = enough said. The salad was just a bit of old lettuce thrown together with onion and tomato. This is normally the type of salad I like, with the exception of the tomato, but the fact that the tomato wedges were bigger than the orange wedges you would see on the side of the field at an under 8s football game meant they overpowered the other items. The dressing was almost non-existent.

Presentation: Yet again I was served a chicken parmigiana with the chicken part resting, in part on the chips. I have said it before and I will say it again: I HATE THIS. Fair dinkum is there a shortage of large plates going around the pubs of Brisbane at the moment because meals just seem to be squashed onto plates.

Size: This was a largish chicken parmigiana.

The Final Word: I have asked myself the question “would I recommend this parma to my mates?” and the answer is “yeah, if your cupboard is bare and you are in Albion”. Enough said really.

Postscript: The service at the Albion Hotel was excellent save that I was not asked if I would like a bottle of water for the table and was parched. We sat in the outdoor portion of the bistro. Two things about the outdoor portion of the bistro are worth noting:

  1. Gents you will need to go to the toilet before sitting down. The running water feature across one wall will, if you do not void before hand, tell your bladder that it is time to go about 5 minutes into your meal. If the feature was meant to drown out the road noise it failed: it just sounded like the running water of a urinal.
  2. We do not have any children but are usually more than comfortable with children in restaurants. Not so tonight though as the fascination of the water feature became too much for one young child who put on a long and resonant turn. This child is lucky to have not ended up in the water feature at our hand because the enclosed nature of the outdoor seating area meant that the noise just got louder and louder as the child became more distressed.
